Place the roast into the crock pot and add the salt and pepper.
Pour the barbecue sauce over the meat covering completely with sauce.
Place the lid on and cook on a medium setting for the entire day. (8 hours).
The sauce has a wonderful flavor and can be thickened with a small amount
of flour, if desired. Serve with crusty bread and complementary vegetables.

barbecue sauce (or 2 cups homemade) -- (16 oz)
Sprinkle ribs with salt and pepper. Place ribs in broiler pan under
broiler for about 10 minutes on each side to brown and remove excess fat.
Or put on your grill outside. Slice ribs into serving pieces and put in
crock pot. Pour in barbecue sauce. Cover and cook on low 8-10 hours or
4-5 hours on high.
Substitutions: Instead of ribs you can also use chicken, ham or pork
chops. For the chicken I use one whole chicken and place it whole in the
pot. Then pour the sauce over it. Once it is done, it comes real easy off
the bone.

all day, or until it is so tender it falls apart easily. Remove from
pot and let it cool slightly, but do not let it get cold. Pull meat
away from fat (remove fat and discard) and shred meat with two forks.
Return meat to crockpot and add a bottle of your favorite barbeque sauce
(I like KC Masterpiece, or Kraft Honey Barbeque sauce) and stir until thoroughly
combined. Continue cooking until heated through. This makes great sandwiches
on buns, or meat entree. Great with coleslaw and baked beans.

MEATBALLS: Mix all ingredients for "Meatballs". Form into
1" balls. Cook in a single layer in a 350° F oven for about 20-30 minutes
or until browned. Remove and drain.
Sauce: Cook onion in oil till tender. Add remaining ingredients.
Simmer 10 minutes. Place meatballs in a crock pot. Pour sauce over
and keep warm.
Can be made a day or so ahead, refrigerated in the crock, and
reheated. The sauce doesn't make a lot, just enough to coat the balls.

Brown meat in heavy skillet. Put onion and pepper in bottom of the crockpot, placing the roast on top of vegs., and then pour the sauce over meat. When doing short ribs, I layer the meat and veggies, then pour in the sauce. ADD NO ADDITIONAL LIQUID! Cover and cook on LOW for 8-10 hours (HIGH for 4 - 5 hours). When meat is done, remove from pot with spatula & place on a broiler pan. Pour some of the juices and sauce over meat and place under broiler for 5-10 min., turning once. You can allow the juices to thicken in the pot to serve with the meat. You can also use that recipe for Spareribs, using 2 cups of BBQ sauce for 3 to 4 pounds of spareribs.

In a medium bowl, mix together 3/4 cup bbq sauce, the jam, and soy sauce until well blended. Place a layer of the ribs in a 4 quart electric slow cooker. Pour on 1/3 of the sauce mixture. Top with another layer of ribs and half the remaining sauce. Top with the remaining ribs and pour on the remaining sauce. Cover and cook on low 8 1/2 to 9 hours, or until the ribs are tender but not completely falling apart. Remove the ribs to a serving dish. Skim off and discard any fat from the sauce in the slow cooker. Stir in the remaining 3/4 cup bbq sauce. Pass the sauce to spoon over ribs. NOTE: for a thicker sauce to serve with the ribs, discard half of the sauce remaining in the slow cooker before adding the remaining 3/4 cup bbq sauce.

saute just until soft. Stir in celery and green pepper; continue
cooking just until celery is soft, then stir in chili powder; cook

vegetables in the slow cooker. Stir in catsup, brown sugar,
mustard, salt, paprika, pepper, water, vinegar and Worcestershire sauce;

pot. Reserve in refrigerator. Cut meat into small pieces and put back into
pot. Add chopped onion, barbecue sauce, salt and vinegar if too sweet.
Add back fat-skimmed pork liquid as needed. Cover and cook additional 1-3
hours or High or 4-8 hours on Low. Stir 2-3 times and break up large meat
chunks. Serve from crockpot onto large buns with dill pickle slices.

Before you go to bed, brown pork roast in skillet with a small amount
of oil. Peel and slice 1 large onion. Place 1/2 onion in bottom

Add rest of onion and cloves. Set on low. In morning, turn
off crockpot, remove meat, and let cool. Discard onion and juices
in crockpot. Shred or tear roast into small pieces. Put back
in crockpot and add barbecue sauce (enough until juicy). Cook on
low 2 to 3 hours or until flavor is blended and hot. Serve on buns.

To make sauce: Mix broth, beef, vegetables, garlic, salt, catsup,
brown sugar, vinegar, mustard, chili powder, Tabasco, bay leaf, paprika,
garlic powder, and Worcestershire sauce. Simmer until heated thoroughly.
Remove bay leaf.
Serve on rolls or buns.

1/4 teaspoon
ground nutmeg
1/4 teaspoon
sugar

cider vinegar -- to taste
sauce, Tabasco -- to taste
Brown roast in a small amount of fat and place in a Dutch oven.
Mix the next 9 ingredients in a saucepan and bring to a boil. Pour
over roast and cover. Bake in a preheated 325°F oven, 40 minutes to
the pound, until done, basting occasionally with drippings.
Transfer roast to a chopping board. Remove meat from the bone and
chop into fairly fine pieces. Season to taste with additional vinegar
and hot sauce. Serve hot with coleslaw and corn bread.

NOTES : This is the most popular barbecue dish in Nor th Carolina, and,
as far as we know, it is indigenous to that state.

sweet onion -- chopped
Put half of onions in bottom of crockpot. Then add meat and other ingredients with remaining onion on top. Cover and cook over night or for 8 to 12 hours on LOW. Remove bone and fat from meat. Put meat back in crockpot. Add chopped onion and barbecue sauce. Cover and cook for an additional 8 to 12 hours on LOW, stirring two or three times. Serve from crockpot on large buns.

Surprise Spareribs

pickling spice

firmly packed brown sugar

dry mustard

ketchup

Coca-Cola® (not diet)
Cut ribs apart and place in Crock-Pot. Cover ribs with water.
Add pickling spice and salt. Cook on low for 6 hours or until tender.
Discard liquid and place ribs in shallow pan. Mix brown sugar and dry mustard
together and sprinkle over ribs. Cover and refrigerate overnight. Mix ketchup
and Coca-Cola together and spread over ribs. Grill or broil until ribs
are browned.

garlic -- minced , up to

onions -- sliced in rings*

barbecue sauce

ginger ale
sandwich buns
*use sweet onions like Maui or Texas Sweet.
Place half of the onion rings in crockpot. Add the roast and then the rest of onions. Pour in 1 cup of ginger ale. Cover and cook on LOW for 8-10 hours, or until pork can be easily shredded. Remove pork from pot and shred. Remove onions and add to shredded pork in a bowl. Discard juice in pot. Return onions and pork to pot, add barbecue sauce and mix. Continue to cook on LOW for 3-4 hours. Makes great barbecue sandwiches.

Yummy Crockpot Barbecue Pork

favorite barbecue sauce
sugar
Cover bottom of crockpot with onion slices. Dot roast with cloves.
Place roast in the crockpot along with the water. Cover and cook
at least 8 hours or overnight on low setting. Remove cloves from
roast and discard. Discard liquid and onions from crockpot.
With a fork, shred the pork and return to the crockpot. Cover and
cook on low at least 2 more hours. Serve on toasted buns with fresh
slices of onion if desired.
