Brown stew meat in oil. When meat is lightly browned add curry and continue browning. Add remaining ingredients and bring to a boil. Simmer about 1 hour, continuing to add juice (water or orange juice) as needed. A pressure cooker or crock pot can be used to hasten cooking. Serve with rice and mixed vegetables or chutney.

Cover and cook on low 5-7 hours (all day) until meat is tender. Turn control to high. Dissolve remaining 1/4 cup flour in small amount of water. Stir into meat mixture, cook on high 30-40 minutes. Serve with rice and salad.

Recipe by: Jo Anne Merrill Preparation Time: 8:00 * Use any cut of beef roast desired.
1. Cut beef roast into serving-sized portions. Use more beef if you need more than 6 servings. Brown beef in a bit of vegetable oil, although you can skip this step if rushed for time. 2. Slice onion and separate into rings. Dice the peeled carrots, dice the celery and slice the peppers into thin strips or circles. Place these into bottom of crockpot. Sprinkle the beef pieces with fresh ground black pepper, minced garlic and the onion soup mix. Place on top of the vegetables. 3. Mix the steak sauce and Worcestershire sauce in a small bowl with about 1/2 cup water and 1/2 cup tomato juice. Pour this over the meat. 4. Turn the crockpot to high for 30 minutes, or, if you're in a hurry, skip this step. Turn to low, cover and cook for 7-9 hours.
* Keep the crockpot covered as much as possible throughout cooking time. A crockpot can be used to cook this type of meal for a varied amount of time, depending on your schedule. It is not important that you take the meat and vegetables out at a specific amount of time. One or two hours either way usually makes no difference.
When ready to serve, dip meat and vegetables out of pot with a slotted spoon. Use the liquid as is or turn crockpot to high and thicken liquid with a little flour or cornstarch.

Trim excess fat from roast. Brown roast on all sides. Combine flour with salt and pepper. Coat meat with flour mixture. Place all vegetables except mushrooms in crock pot. Put roast on top. Arrange mushrooms on top of roast. Cover and cook on low (3 1/2) for 7 to 10 hours. Transfer roast and vegetables to a heated platter. Turn crock pot to high. Blend flour and water. Stir into crock pot and cook until thickened, stirring often. Correct seasonings and serve with roast.

Brown meat in heavy skillet. Put onion and pepper in bottom of the crockpot, placing the roast on top of vegs., and then pour the sauce over meat. When doing short ribs, I layer the meat and veggies, then pour in the sauce. ADD NO ADDITIONAL LIQUID! Cover and cook on LOW for 8-10 hours (HIGH for 4 - 5 hours). When meat is done, remove from pot with spatula & place on a broiler pan. Pour some of the juices and sauce over meat and place under broiler for 5-10 min., turning once. You can allow the juices to thicken in the pot to serve with the meat. You can also use that recipe for Spareribs, using 2 cups of BBQ sauce for 3 to 4 pounds of spareribs.

* (leave skin on) Wipe roast well and trim off all excess fat. Lightly rub top of meat with oil. Dust meat with salt, pepper and ginger. Insert cloves in meat. Place apples and onions in the bottom of the crock-pot and put the roast on top of the apples and onions. Pour in the apple juice. Cover and cook on a low setting for 8 to 12 hours. Remove the roast and apples to a warm platter when fully cooked. Turn the crock-pot to High setting. Make a smooth paste with the flour and water and stir the paste into the crock-pot. Cover and cook until thickened. Pour gravy over roast when serving. Makes about 6 to 8 good sized servings.

Place roast in large bowl or bag with marinade. Cover and chill 1 day. NOTE: Will turn a purpil color.
Remove from marinade. Pat dry with paper towels. Brown on all sides.
Place in crockpot. Strain marinade reserving vegetables. Add marinade to meat. Saute vegetables until glazed and add to meat. Loosen pan drippings with a little water and add to pot along with bouillon and tomato sauce.
Cover and cook on low 8 hours or until tender.

Mix ground beef and sausage meat in a bowl; shape into 2 large patties. Brown one at a time, 5 minutes on each side in a large kettle or 5 quart electric slow cooker. Remove and reserve. Pour off all but 2 tablespoonsful of the drippings. Add onions and garlic, saute just until soft. Stir in celery and green pepper; continue cooking just until celery is soft, then stir in chili powder; cook 2 minutes longer. Combine meat, broken into chunks and sauteed vegetables in the slow cooker. Stir in catsup, brown sugar, mustard, salt, paprika, pepper, water, vinegar and Worcestershire sauce; stir until well-blended; cover. Cook on low for 8 hours, stirring after 4 hours if possible or on high for 4 hours, stirring after 2 hours. Spoon over your choice of hot corn bread squares, rice, toast or tamales.

Fry bacon; fry onions in bacon fat until slightly brown, add garlic and fry for 30 seconds; remove onions, garlic and bacon with slotted spoon and add to meat in liner. Saute mushrooms in remaining bacon fat (add butter if needed). Remove mushrooms with slotted spoon and add to meat-onion mixture. Pour reserved 1 cup of marinade over all. Place liner in base. Combine steak, bacon drippings, cooked bacon, seasonings, boullon, and Burgundy in slow-cooking pot. Cover and cook on low for 6 to 8 hours or until meat is tender. Turn control to high. Add mushrooms; cook on high 15 minutes. To thicken sauce, if desired, add cornstarch (dissolved in 2 tbs. cold water) with mushrooms.

Instructions: ------------- Cut the steak into 1 inch cubes and toss in the flour seasoned with salt and pepper. Brown on all sides in the oil, then remove from the pan. Cut the onions into thin slices and cook in the oil until soft and golden. Slice the carrots thinly and put into the crockpot. Top with the onions and the meat. Add any remaining flour to the fat in the pan and cook for 2 minutes. Work in the stock and stir over low heat until the liquid comes to the boil. Pour into the crockpot, cover and cook on HIGH for 30 minutes, then on LOW 6-7 hours.

Trim all excess fat from roast. Place potatoes and onion in bottom of crockpot. Make a smooth paste of flour, mustard, chili sauce, Worcestershire sauce, vinegar and sugar. Spread over top of roast (cut roast in half, if necessary, to fit easily). Place roast in crockpot on top of potatoes and onions. Cover and cook on LOW setting for 10 to 12 hours (on HIGH setting for 5 to 6 hours). (about 3 quarts).

Cut meat in 1-inch cubes. Fry bacon until crisp. Remove from pan. Pour off all but 2 tablespoons drippings. Brown meat and onions in drippings. Transfer to crockery pot along with bacon. Add vinegar and brown sugar to pan drippings. Cook 1 minute; stirring. Pour in wine. Bring to a boil. Pour over meat. Season with salt; pepper, garlic, thyme, stock base and orange peel. Cover. Cook on LOW 8 hours. Turn to HIGH. Mix cornstarch with 1 tablespoon cold water. When pan juices are bubbling, stir in cornstarch paste. Cook, stirring until thickened. Garnish with parsley. Makes 6 servings.

Cut flank steak into 6 portions. In any size crockpot, combine meat, onion, green pepper, red pepper, jalapeno pepper, cilantro, garlic, chili powder, cumin, coriander and salt. Add tomatoes. Cover and cook on low for 8-10 hours or on high 4-5 hours. Remove meat from crockpot and shred. Return meat to crockpot and stir.
To serve fajitas, spread meat mixture into flour tortillas add favorite toppings. Roll up tortillas.

At serving time, stir a few Tablespoons of the cooking juices with sour cream, then stir this cream mixture into the meat. Check seasoning for salt. Brown the roast(s) on all sides in a little bit of oil. Place in the crock pot. Add an onion, cut in about 6-8 pieces. I let this simmer away for about 5 - 6 hours. We usually add potatoes (quartered) the last 60-80 minutes. Other root veggies work great too. For the leftovers, I slice the roast somewhat thin, and breakup up the slices (sort of shred it), put it in a sauce pan and add barbecue sauce and a little water. I let this simmer for about 20 minutes, stirring occasionally. If it gets too dry add more sauce or water. Serve on rolls. This is great to take for lunch and heat in the microwave at work. Note: ----- Be sure to select a roast or two that will fit it the crock pot! (My first one didn't!)

Cut round 1/2" thick. Trim separable fat and remove bone. Pound with meat mallet or saucer; slice into strips 1" wide and 4" long. Place bacon slices on steak strips and roll up, securing with small wooden picks. Brown roll-ups slowly in hot oil in large frying-pan. Remove roll-ups to crockpot. Add soup-mix and 2 cups of water to frying-pan and simmer 3 minutes, scraping particles from pan. Pour liquid over roll-ups. Cook until done. Remove roll-ups to warm serving dish. Combine cornstarch and 1/2 cup water, mixing until smooth. Add to liquid from crockpot and simmer, stirring constantly, 3-4 minutes or until thickened. Pour gravy over roll-ups; garnish with parsley and cherry tomatoes.

No particular measurements are needed. You judge according to the size of your roast pan or Dutch oven pot. You make as much or as little as you desire. Of course the less you make, you must roast for less time.
1 layer of stew beef cubes to cover bottom of pan
1 layer of carrots (sliced) to cover beef cubes. (Fresh taste much better. But you can use frozen(thawed) or canned if in a hurry)
1 layer of potatoes, peeled and sliced, to cover carrots (fresh or frozen and thawed)
1 layer of cut green beans (frozen or fresh)
1 can of Cream of Mushroom soup with roasted garlic (do not add water) (I'm glad you can now buy this soup - I used to crush the garlic myself and add it - this is much easier.)
1 can of Tomato Bisque soup (do not add water)
1 soup can of water
DO NOT STIR. Just spread soups over last layer of veggies and dump in the water. Cover and bake at 300 degrees for 3 hours. Stir when done. My kids used to like to dip buttered fresh bread in the "gravy" of this stew. A few people accuse me of adding "Dinty Moore" to get the consistency. But I don't.
You can also do this in the crock pot at low setting in the morning and enjoy a good "home cooked" meal when you come home at the end of the day. Just put the beef cubes on top instead of on the bottom. And use 1/2 can of water because the crock pot tends to make more "juice."
Try it you'll like it.

Cover and cook on LOW 8 to 10 hours, or until meat is very tender and veggies are done. If desired, potatoes may be omitted and the stew, when done, may be served with large macaroni cooked separately. Leftovers can be refrigerated all in the same pot and reheated in bowls in the microwave at 50% power.

1. Cut the beef into thin slices across the grain. PLace in a 4-quart electric slow cooker. Add the mushrooms, scallions, onion, thyme, sherry, broth, dry mustard, and garlic pepper. Mix well.
2. Cover and cook on the low heat setting about 8 hours, or until the beef is tender, stirring once, if possible. Increase the heat setting to high.
3. Mix together the sour cream and flour until thoroughly blended. Stir a little of the hot liquid from the slow cooker into the sour cream mixture; then stir the sour cream mixture into the slow cooker, mixing well. Cover and cook on high 30 to 40 minutes, or until thickened slightly.
