   8      cups          water
   1      pound         navy beans -- dried
                        -- (2-1/2 cups)
   4      ounces        salt pork
                        (cut into small pieces (1 cup)
   1      cup           onion -- chopped
     1/2  cup           molasses
     1/4  cup           brown sugar -- packed
   1      teaspoon      dry mustard

  In saucepan bring water and beans to boiling; reduce heat and simmer, covered, 1-1/2 hours.  Remove from heat and pour into bowl; cover and chill. Drain beans; reserve 1 cup liquid.  Transfer  beans and reserved liquid to crockery cooker.  Stir in pork, onion,  molasses, brown sugar, and mustard.  Cover; cook on low heat setting for  12-14 hours. Stir. Makes 6 servings.

     1/2  teaspoon      ginger
   1      teaspoon      salt
                        pepper
   8      ounces        orange juice concentrate
   1 1/2  cups          shredded coconut
   2      cups          mandarin orange segments
                        OR fresh orange segments
   2                    green onions -- chopped
                        cooked rice -- hot

  Put chicken, ginger, salt, pepper & frozen orange juice in slow-cooking crockpot and cook on low 6 hours.   Serve chicken on hot cooked rice on platter.  Top with coconut, orange segments and green onions. Serve chicken liquid in gravy boat, if desired.

                        halved vertically
   1      large         Spanish onion -- cut
                        into large chunks
   2      large         Carrots -- sliced
   1                    Celery rib  -- (with
                        leaves) -- sliced
                        Apricots -- dried (I use
                        a dozen)  -- about
   1      package       Onion Soup
                        Apricot nectar  -- (to cover)
                        Place chicken pieces on bottom of -- sprinkle with the
                        -- crockpot
                        dried soup -- cover chicken with
                        the nectar. Place veggies on top.
                        (If you cover the veggies with the nectar -- there will be too
                        much
                        liquid.)
                        Cook for 6-7 hours on low -- bone the chicken
                        (and remove
                        gristle/connective tissue). If you -- you can
                        refrigerate it
                        de-fat the stuff.
                        ***VICKI'S NOTES***
                        * Use 1 envelope of soup mix -- French
                        onion was in original
                        recipe -- but I just use

Yes they are!  Try this...  A few chicken pieces, legs and thighs work pretty well...  1 packet of French Onion Soup, 1 can Apricot Nectar, maybe a few dried apricots as well.  Chopped onion, celery (you get the idea);  mix it all up and place in crockpot. cook on low heat for 6-8 hours...  Dee-lishus!  (call it whatever you want)  Bon appetit!

   1                    frying chicken -- cut up
   1      teaspoon      salt
     1/4  teaspoon      pepper
   1      clove         garlic -- minced
     1/8  teaspoon      saffron powder
   3      cups          broth or bouillon
   2      tablespoons   dry sherry
   1                    16 ounce ca peas -- drained
     1/2  cup           stuffed green olives -- sliced
   2      cups          cooked rice

In slow-cooking pot, combine chicken with salt, pepper, garlic and saffron. Pour chicken broth and sherry over chicken. Cover and cook on low for 4 to 6 hours. Drain chicken; save 2 cups of the broth. Turn control to high. In slow-cooking pot, combine chicken, 2 cups broth, peas, olives, and cooked rice. Cover and cook on high another 20 to 30 minutes, or until hot.

  Combine all ingredients in slow-cooker.  Cover pot and set at Low.   Cook for 6 to 8 hours, or until chicken is tender.  YIELD: Serves 6   to 8

     1/2  teaspoon      White pepper
     1/2  teaspoon      Paprika
   1      tablespoon    Butter/margarine
     1/2  cup           Rich chicken broth
   3      tablespoons   Sherry
     1/2  teaspoon      Dried tarragon
   1      can           Mushrooms
   2      tablespoons   quick-cooking  -- (heaping)
                        -tapioca
   2      jars          marinated artichoke
                        -hearts -- reserve 1 T.
                        -of the marinade

   Wash chicken. Pat dry with paper towels. Season with   salt, white pepper, and paprika. Using a large frying   pan, brown chicken in 1 T. butter.    Place mushrooms and drained artichoke hearts in   bottom of crockpot. Sprinkle with quick-cooking   tapioca. Add the browned chicken pieces. Pour in broth   and sherry. Add tarragon.    Cover crockpot and turn to Low heat setting. Cook for   7-8 hours. OR cook on High for 5 hours.    If you don't want to brown the chicken first, it's   o.k.

  Start crockpot on LOW. When ingredients are heated, add rice. Cook   until done.

Heat oil in skillet. Sautee onion and garlic until light brown. Remove. Add sausage and chicken to brown in the skillet. Drain and pat dry. In crockpot combine all other ingredients together with the onions and garlic. Add the sausage then top with the chicken breasts. Cover and cook on low setting 6-8 hrs.

   2      cups          diced potatoes

     1/2  cup           V-8 juice
   1      teaspoon      chili powder
   6      drops         hot pepper sauce
                        salt and pepper to taste
     1/3  cup           yellow cornmeal
   2      tablespoons   chopped fresh parsley
     1/2  cup           sliced celery
     1/2  cup           chopped onion
     1/2  teaspoon      salt
   1 1/4  cups          biscuit baking mix
   1      cup           shredded American cheese
     2/3  cup           milk

1. Thaw beans by placing in strainer and running hot water over beans. Transfer to crock pot. Add chicken, potatoes, chicken broth, V-8, celery, onion, chili powder, salt, and hot pepper sauce, mixed together. Cover, cook on low for 4 hours. Turn to high setting and heat until bubbly. Add water at this point if needed. 2. Combine biscuit mix, cornmeal, 1/2 cup cheese, and parsley. Add milk and stir until just moistened. Drop by tablespoons onto stew; cover.      1/4  teaspoon      powdered thyme
   1                    bay leaf
     1/2  cup           dry white wine  -- (optional)
   1      cup           dairy sour cream
   1      cup           packaged biscuit mix
   1      tablespoon    chopped parsley
   6      tablespoons   milk
  10      small         white onions

Sprinkle chicken with salt and pepper, place in crockpot. Put all onions into pot. Add garlic, marjoram, thyme, bay leaf and wine. Cover and cook on low 5 to 6 hours. Remove bay leaf . Stir in sour cream. Increase heat to high and combine biscuit mix with parsley. Stir milk into biscuit mix until well moistened. Drop dumplings from teaspoon around edge of pot. Cover and cook on high for 30 minutes.

     Place the veggies on the bottom of the pot, put the chicken on top, followed by the seasonings.  Pour 3 cups of water over. Set it on low and cook for 8-10 hrs.    Take chicken out (carefully, because it will come off the bones) and put noodles in the broth, turning it up to high. Let the noodles cook for 45 min., while you take the meat off the bones. Mix the meat in. This is like a very thick chicken soup and the basil makes this delicious!

   5      cloves        garlic -- minced, up to 6
   1      teaspoon      dried oregano -- (or use fresh), up

   1      teaspoon      celery seed
     1/2  cup           white wine -- (or water)

Place onion slices in bottom of crock pot. Arrange chicken pieces on top of onion. In separate bowl, combine remaining ingredients; pour over chicken.

Cook on low 7-9 hours. Serve over pasta (i.e., spaghetti or egg noodles).

VARIATION: Instead of using canned mushrooms in the recipe, I like to use fresh, sliced mushrooms. I saute them in a little butter and garlic until they're golden brown, then add them to the crockpot mixture. Or, you can omit them from the crockpot and saute them separately after the chicken has been cooked 7-9 hours (as you are preparing the tomato gravy -- directions follow). You can add the sauteed mushrooms to the tomato gravy when the tomato gravy has reduced and is ready to serve. It is delicious this way, and this is my preferred preparation.

After the chicken has cooked for 7-9 hours, I remove the chicken to a plate and keep it in a warm oven (so it doesn't get cold). I spoon out the tomato-mushroom liquid and place it in a saute pan over medium-high heat. When the mixture begins to bubble, turn the heat down to medium and cook until it reduces to a thick liquid/gravy, stirring frequently to prevent burning or sticking. You may wish to add about 1/4 to 1/2 cup of dry white wine or sweet sherry to the sauce toward the end of the cooking time for this sauce for added flavor.

To serve, place chicken piece on plate, arrange pasta all around; spoon tomato-mushroom gravy over the top.

Stir in cooked chicken,  mushrooms and cooked spaghetti. Cover and cook on high 15 minutes. Sprinkle the top with Parmesan cheese.  Note* Chiccken and broth may be cooked the day ahead of serving and be refrigerated at this point. Then 1 hour before servingtime, combine the remaining ingredients and complete.

When the rice is done, the chow mein is done.  Serve over the rice.  Note that the chicken is so tender that it will literally fall off the bone.  What I like to do is de-bone all my pieces and mix everything (chow mein, rice) up together.

  Sliced fresh mushrooms are best, although you can use   canned.

  Brown bell pepper, onion, and garlic in oil in   skillet.  Also brown mushrooms, if using fresh.  Place   whole chicken in crockpot; add seasonings and   vegetables, topping with vegetables from skillet.  Add   wine.  Cook until done.

  Remove chicken to warmed platter (in 200-degree oven).   Add water to cornstarch and salt and stir to a paste,   then add to crockpot mixture and cook until slightly   thickened and bubbly.  Spoon sauce over chicken.

In a medium skillet, over medium high heat, heat the oil and saute the chicken, turning often, until well browned all over.  Remove the chicken to a plate.  Saute the onion in the skillet until well browned. Turn into the crockpot.  Place the tomatoes, orange, sugar, salt and pepper in the pot and set the chicken on top.  Rinse the skillet with the water and scrape into the cooker.  Add the bouillon cube.  Cover and cook on Low for 5 to 7 hours.

Before serving, remove the chicken to a deep serving dish and keep warm.  Turn the pot contents into a skillet, set the heat to high and simmer until thick enough to mound on a spoon.  Stir in the jelly and the sherry and cook, stirring until the sauce boils.  Do not overcook, lest the sauce lose its shiny quality.  If you wish, add some sugar or sweet sherry to further brighten the taste.  If sauce is not shiny enough, bring back to a very brisk boil and quickly stir in some jelly.  Pour sauce over the chicken.

Sprinkle turkey with salt and pepper.  Soak cheesecloth in wine. Set turkey on cheesecloth.  Stuff bread mixture into slits of turkey. Fold one end of cheesecloth over other to cover meat.

  Place on metal rack or trivet in slow-cooking pot.  Cover pot and cook on low for 7 to 9 hours or until tender.  Pour additional wine over turkey during cooking.  Remove from pot and take cheesecloth off immediately.  If browner breast is preferred, remove from pot and brown in 400 degree oven for 15 to 20 minutes.  Let stand 10 min.  Drippings may be thickened for gravy if desired.

  Serve each person one or more thick slices of turkey with dressing in between. This recipe designed for 4 1/2 qt or larger slow cooking pot.

Pour curry sauce over chicken. Cover pot and cook on low for 4 to 6 hours. Remove chicken from pot. Turn control to high. Stir in prunes. dissolve cornstarch in water; stir into sauce in pot. cover and cook on high for 10 to 15 minutes or until slightly thickened. Add peaches. Serve chicken with sauce. Peanuts, coconut and chutney are ideal accompaniments to this dish.

1.  Cut chicken into pieces, if needed. 2.  Dump chicken pieces into crock pot. 3.  Dump 1 jar spaghetti sauce over chicken. 4.  Shake dried oregano and garlic salt (or your other favorite additives to spaghetti sauce), to taste. 5.  Put lid on crock pot and turn the pot on LOW. 6.  Have a nice day, don't worry, be happy. 7.  Come home, fix a pot of rice or pasta, maybe a salad, and a loaf of french bread. 8.  CAREFULLY remove the chicken from the crock pot to a serving platter (it's tender and will fall apart at the slightest provocation), then spoon the leftover liquid into a gravy boat or whatever you serve spaghetti sauce in. 9.  Fight over who gets the top pieces with all the oregano and garlic salt piled on top.

In a large pot, heat olive oil over medium-high heat.  Add onion and cook until onion begins to soften, 3-5 minutes.  Add garlic and cook 1-2 minutes longer.  Do not brown.  Add tomatoes, tomatillos and jalapeno, cook until tomatillos are soft.  Add chicken stock, green chilies, cooked chicken, oregano, cumin, cilantro, beans and lime juice.  Heat through and season to taste with salt and pepper.

Serve over hot rice. I got this recipe about 18 years ago, and my little old crockpot still does a good job with it! Recipe can easily be increased for a larger pot.

  Wash chicken pieces; cut away excess fat.  Place raw chicken pieces in   crock with largest bony pieces on bottom. Add bouillon broth; sprinkle   chicken with salt, pepper, poultry seasoning. Add celery and carrots   on top.  Cover. Place crock into outer shell; cook. For 3 1/2 quart:   Cook on Low setting, 8 to 10 hours or High setting 4 to 4 1/2 hours.   For 5 1/2 quart:  Cook on Low setting, 6 to 8 hours or High setting,   3 to 3 1/2 hours.  Combine biscuit mix, milk, parsley flakes; stir   until just moistened.  Drop dumpling mixture by spoonfuls (about 8)   over steaming chicken; cover, cook on High setting 30 minutes in 3   1/2 quart; 15 to 20 minutes in 5 1/2 quart.  (Do not remove the cover   during the steaming of the dumplings).  Serve immediately - when   dumplings are at their best. Makes 4 servings.

About 3/4 hour before serving, mix soup, cream cheese, wine and onion in saucepan. Cook until smooth. Pour over chicken, cover and cook 30 minutes. Serve with sauce. Serve with rice or noodles. Rinse off the chicken & pat dry. Season with salt & pepper. In a skillet, brown chicken in butter & place in the slow-cooker. Saute onion and mushrooms in the skillet. Add white wine to skillet and stir, scraping to remove all of the brown stuff stuck to the bottom of the pan! Pour all of that over the chicken and sprinkle with the Italian seasoning. Cover and cook for 3 to 4 hours on high. Serve over rice (spoon sauce over top) & little sweet english peas. 4 to 6 servings

Dip eggplant slices in mixture, drain slightly.   Saute a few slices at a time quickly in hot olive oil. Combine seasoned bread crumbs with the Parmesan cheese . In  removable liner, layer one-fourth of the eggplant, top with one-fourth of  the crumbs, one-fourth of the marinara sauce and one-fourth of the  mozzarella cheese. Repeat three times to make four layers of eggplant,  crumbs, sauce and mozzarella cheese.  Place liner in base. Cover and cook on low 4-5 hours or auto 3 hours.

I only cook this about 1 hour.  The chicken should be tender enough to be falling off the bone. This can also be cooked on a Crockpot, on "low" about 10 - 12  hours. It's from a Tabasco Sauce ad, dated 1926/1976 and it's as good as  it sounds.

Cover and cook on low for 4 to 5 hours or until tender. Drain; place on broiler pan. Meanwhile, in small saucepan, combine cornstarch with sugar, salt, ginger, pepper, lemon juice, soy sauce and garlic salt. Simmer, stirring constantly, until mixture thickens. Brush some sauce on chicken; brown under broiler. Turn; brush sauce on chicken and brown other side. Makes about 25 to 30 appetizers. Recipe may be doubled for a party. Keep appetizers hot and serve from slow-cooking pot.

  Stuff the goose with a mixture of the fruits, herbs, and garlic; sew   or skewer closed, and roast on a rack in an open roasting pan at 325   degrees for 30 minutes per pound. Pour off the fat as it accumulates,   and set aside When goose is about done, make a sauce by blending   together the breadcrumbs vinegar, spices, and wine, with a little of   the accumulated fat (about 1/4 cup is probably as much as most people   would find palatable). Pour over the goose, or serve separately.

   3                    garlic cloves -- minced

Combine all ingredients, except chicken, in a bowl. Dip each piece of chicken in the sauce. Place into crock pot. Pour remaining sauce over the top. Cook on LOW for 6 to 8 hrs or HIGH for 3 to 4 hrs.

Wash and remove fat from chicken. Bake in 350 degree oven for about an hour. Meanwhile, combine all other ingredients except rice). Put chicken and sauce in a crockpot on low heat and cook for at least 4 hours to blend flavors. Before serving, cook rice according to directions on box. Serve chicken and sauce over rice. Serves 6.

  Combine all ingredinets except chicken in a shallow   dish.  Mix well. Add chicken, turning to coat.  Cover   and marinate in the refrigerator at least 2 hours.   Remove chicken from marinate.  Put the marinade aside.   Grill 4 to 5 inches from medium-hot coals for 15   inches from medium-hot for 15 minutes.  Turn and baste   frequently with reserve marinade. Serves 4.

                        melted butter

In large bowl, combine soup with marjoram, thyme, onion, celery, mushrooms, ham, chicken, and peas. Pour into slow-cooking pot. Cover and on low for 5 to 6 hours. Spoon into shallow baking dish. Arrange biscuits on top; brush with melted butter; sprinkle with sesame seeds. Bake in 350 F oven for 20 to 25 minutes or until biscuits are brown.

  Chop onions using only 1" of green tops.  Saute in 1 T of butter until glazed.  Transfer to crock pot.  Coat chicken breasts in seasoned flour. Saute in butter until brown on both sides.  Transfer to crock pot.  Drain pineapple.  Pour juice over chicken.  Cover and cook on low 3-4 hours (high 1 1/2 - 2 hours) or until breasts are tender.    Saute pineapple slices in  butter until golden.  Place on heated plater.  Top each with a chicken  breast.  Slice avocado into 8 lengthwise strips.  Place 2 strips on each chicken breast.  Serve pan drippings over rice.

     1/4  cup           parsley -- chopped
   2      tablespoons   fresh thyme -- minced
                        salt
                        pepper
   2      ounces        Fontina cheese -- sliced
   2      ounces        prosciutto
   4      sprigs        parsley or thyme
     2/3  cup           chicken broth
     1/3  cup           dry white wine
   2      tablespoons   cornstarch
   2      tablespoons   cold water

Rinse turkey, pat dry and place, skin down, on cutting board. Sprinkle meat side with chopped parsley and thyme, season with salt and pepper.  Cover with cheese and prosciutto, overlapping slices.  Starting with a long edge, roll up turkey, firmly, jelly roll style.  Overlap 3-4 sprigs parsley or thyme down length of roll; tie roll securely with string at 2" intervals (at this point you may cover and refrigerate until next day).

Place turkey, thyme side up, in slow cooker.  Pour in broth and wine.  Cover and cook until meat in thickest part is very tender when pierced (9-10 hrs).

Carefully lift turkey to a warm platter and keep warm.  Skim and discard fat from cooking liquid; blend in cornstarch (blended with water).  Increase cooker to HIGH; cover and cook, stirring 2 or 3 times, until sauce is thickened.

Remove and discard strings and thyme sprigs from turkey; slice meat 1/4" thick.  Garnish with additional thyme sprigs, if desired.  Serve with sauce.

Sliced fresh mushrooms are best, although you can use canned.    Brown bell pepper, onion, and garlic in oil in skillet.  Also brown mushrooms, if  using fresh.  Place whole chicken in crockpot; add seasonings and vegetables, topping with vegetables from skillet.  Add wine.  Cook until done.    Remove chicken to warmed platter (in 200-degree oven).  Add water to cornstarch and salt and stir to a paste, then add to crockpot mixture and cook until slightly thickened and bubbly.  Spoon sauce over chicken.

  Clean the scallions, discarding dried outer leaves and roots. Slice   both white and green parts very thinly and set aside to use at the   last minute as a garnish.     Marinate chicken in soy and sherry with the garlic. Dredge in   starch. In a hot wok, stir-fry the ginger, garlic, and hot peppers in   oil. Push them to one side (discard them if you feel like doing so -   I usually toss     ginger but keep garlic in and separate out hot peppers for me to   eat by myself). In this oil, stir-fry the chicken until it's firm.   Add sugar and salt and dark soy and broth. Cook until sauce is thick   (if it's too thick, add more broth). In a separate pan or wok,   stir-fry watercress in a small amount of oil over very high heat for   30 seconds. Mound watercress on a platter, make an indentation in the   middle, pour in the chicken, and strew scallions over. Serve with   plain white rice.

    This is neither crunchy nor sweet as the dish is usually served in   restaurants. This is more or less the way it used to come out of the   kitchen at Say Eng Look in New York, which served the best version   I've ever eaten (that includes my own). Recent visits to that   restaurant have yielded a more standard version.

With a fork, prick skin of duckling all over at approximately 2-inch intervals. Place ducklilng, breast side up, on metal rack or trivet in slow-cooking pot. In saucepan, saute onion and tarragon leaves in butter. Add orange juice, salt, mustard, currant jelly, and orange peel. Cook over medium heat, stirring constantly, until jelly is melted. Reduce heat; stir in wine and orange sections. Brush 1/3 of the sauce over duck; cover slow-cooking pot and cook on low 7 to 9 hours. During cooking drain fat and turn duck once, if possible. Stir remaining sauce into cornstarch and cook over medium heat until sauce thickens, then simmer 1 minute. Pour sauce over duck just before serving. -

   1      cup           Milk
   2                    Eggs
     2/3  cup           Bisquick

   1 1/2  cups          Chicken -- cooked & diced
   1 1/4  cups          Mozzarella cheese shredded

  Heat oven to 400. Grease 10 inch pie plate. Layer cottage cheese and   parmesan cheese in pie plate. Mix chicken and 1/2 cup mozzarella   cheese, the garlic powder, oregano, basil and tomato paste; spoon   over parmesan cheese. Beat remaining ingredients in blender on high   for 15 seconds, by hand for 1 min. until smooth. Pour into pie plate   and bake 30 minutes. Top with remaining mozzarella cheese. Bake 5-8   minutes longer or until knife inserted in center comes out clean.   Cool 5 minutes.
