                   Cornish Game Hens with Orange Sauce

   4                    Rock Cornish game hens
   1      8 oz pkg      stuffing mix
   1      cup           chicken stock
   1      large         orange, -- cut up
     1/4  cup           fresh orange juice
   2      tablespoons   honey
   1 1/2  teaspoons     vegetable oil
   1      tablespoon    fresh lemon juice
     1/4  teaspoon      grated orange peel

Rinse hens; sprinkle inside and out with salt and pepper.  Prepare stuffing mix according to package directions.  Spoon into hens and truss.  Arrange hens on a rack in crockpot, or, if crockpot is small, place neck ends down.  Combine remaining ingredients.  Baste hens with some of the sauce and pour remainder in pot.  Cover and cook on low for 5 to 7 hours.  Baste hens once or twice during cooking.  Spoon sauce over hens at serving time.

                      Cornish Hens with Cherry Sauce

   4                    Cornish game hens
   1      6 oz pkg      Stove Top® stuffing mix
   1 1/2  cups          hot water
     1/4  cup           butter -- PLUS
   2      tablespoons   butter
     3/4  cup           red currant jelly
     1/4  cup           coarsely chopped dried red cherries
   2      teaspoons     fresh lemon juice
     1/2  teaspoon      salt
     1/4  teaspoon      ground allspice

Thaw hens if frozen. Place a rack in a slow cooker. In a medium bowl, combine stuffing mix with seasoning packet, water and 1/4 cup of the butter. Stuff hens and place on rack in slow cooker. In a small saucepan, combine jelly, cherries, remaining 1 tablespoons butter, lemon juice, salt and allspice. Cook over low heat, stirring until jelly is melted.  Reserve 2/3 cup sauce. Brush remaining sauce on hens in cooker. Cover and cook on low 6 to 7 hours. Serve whole or cut hens in half with kitchen shears.  Spoon reserved sauce over hens at serving time.

Lynn's notes: I made this 1-15-96. I used Orowheat cornbread stuffing and used 1 cup of hot water. I used 2 hens (4 would never fit into the crockpot) and that would be enough for 4 people. It was easy to do and delicious. Would make a wonderful Valentine's Day dish.

                       Crock Pot Cornish Game Hens

                        salt and pepper -- to taste

Place rice and water in crock pot; stir well. Place Cornish hens on top of rice; add salt and pepper. Cook over low setting 6 hours.

                         Goose with Sauce Madame

   1       t            Hyssop (or mint)

   1                    Pear, hard -- peeled, cored
                        -& chopped
   1                    Quince -- pared, cored &
                        -chop
   2                    Garlic clove -- finely minced
   1       c            Grape, seedless
     1/4   c            Bread crumbs
     1/2   ts           Cinnamon
     1/4   ts           Ginger
     1/4   c            Vinegar
     1/4   c            Wine, red
     1/2   ts           Salt -- or to taste

  Stuff the goose with a mixture of the fruits, herbs, and garlic; sew
  or skewer closed, and roast on a rack in an open roasting pan at 325
  degrees for 30 minutes per pound. Pour off the fat as it accumulates,
  and set aside When goose is about done, make a sauce by blending
  together the breadcrumbs vinegar, spices, and wine, with a little of
  the accumulated fat (about 1/4 cup is probably as much as most people
  would find palatable). Pour over the goose, or serve separately.

                     Low-Fat Country Sausage Patties

   1       lb           Ground turkey -- beefalo, or
                        -extra lean beef or pork
     1/2   c            Breadcrumbs
   2       cl           Garlic -- minced
   2       tb           Fresh parsley -- finely
                        -chopped or
   2       ts           Dried parsley
   1       t            Thyme
   1       t            Sage
     1/2   ts           Marjoram
     1/2   ts           Salt
     1/4   ts           Fresh ground pepper
     3/4   ts           Crushed hot red pepper
                        Nonstick cooking spray

  Combine all ingredients and form into 8 patties. "Fry" in a Teflon pan
  coated with nonstick cooking spray until brown and crisp on both
  sides, about 20 min. Add a little water during cooking if patties
  begin to stick.
 
  Variation: Add chopped onions and mushrooms and shape into one
  meatloaf and bake.
 
  Per single patty serving using turkey: 7.2 g fat, 2.0 g saturated
  fat, 35 mg chol., and 221 mg salt.
