This pretty cookbook is like having a day out with the girls. It is full of stories, tips, ideas and ideas for enjoying life, relieving stress, cutting fat and calories. It is chocked full of recipes that are good for you, good for your kids and good for your diet. All recipes are sent in by contributors and are "real" food that your family won't "yuck" at! It
contains great ideas for motivation and reward, and hearwarming stories to warm your heart while you shed those unwanted pounds!

It is plastic spiral bound, so lays flat while you are cooking (!) and has beautiful hand-drawn black and white country-style pictures to delight you on each page. All
220 pages are a joy to browse. .. one of my favorite books in a wonderful series.

                       Chicken Bow-Tie Noodle Soup

   1      10 ounce      pa  bow-tie pasta
     1/4  pound         mushrooms -- cleaned and sliced
   4      stalks        celery
   6                    green onions -- chopped
   2      whole         chicken breasts -- cooked
   6      cups          chicken broth -- de-fatted
   2      tablespoons   parsley
   1      teaspoon      savory
                        salt
                        pepper

Partially cook pasta separately, drain and set aside. In a large saucepan,

saute vegetables in no-stick spray for about 5 minutes, stirring
frequently. Shred chicken to bite-size pieces and add to pan to brown
lightly. Add broth, bring to a boil and then reduce heat to simmer for 10
to 12 minutes. Add bow-tie pasta, parsley, savory, salt and pepper. Heat

                           Chicken Chili Salad

   2      cups          chicken breast strips -- cooked
   2      medium        tomatoes -- chopped
   1      cup           carrot -- shredded
   1      cup           celery -- chopped
   6      cups          Romaine lettuce leaves -- torn
   3      tablespoons   green onion -- chopped
                        ***SAUCE***
   2      cups          non-fat cheddar cheese -- shredded
     2/3  cup           low fat milk
   3      tablespoons   milk chili peppers -- chopped
   3      tablespoons   ripe olives -- chopped

Combine salad ingredients. For sauce: place cheese and milk in a saucepan
over medium heat. Stir until cheese has melted and mixture is smooth. Add
chili peppers and ripe oives. Pour over salad and toss. Serves 4. Kathy

                             Cinnamon Muffins

   1 1/2  cups          whole wheat flour
   1 1/2  teaspoons     baking powder
   1 1/2  teaspoons     cinnamon
     1/2  teaspoon      baking soda
     1/4  teaspoon      salt
   1                    egg
   1      cup           buttermilk
     1/4  cup           honey
                        OR 1/2 cup apple juice concentrate
   3      tablespoons   applesauce
   2      tablespoons   oil

Sift together dry ingredients. In separate bowl combine wet ingredients.
Make a well in dry ingredients and add wet ingredients. Stir until moist.
Spoon into oiled muffin tins. Bake at 400 degrees for 20 minutes. Makes 12

                          Crunchy Chocolate Pie

   3      tablespoons   reduced fat peanut butter
   2      tablespoons   honey
   2      cups          toasted rice cereal
   2      cups          skim milk
   1      1 1/2 ounce   reduced calorie instant chocolate
                        -- pudding mix

Coat an 8 inch pie plate with non-stick spray. In a saucepan, warm the
peanut butter and honey over low heat until the peanut butter has melted.
Remove the pan from the heat. Stir in the cereal. Press the cereal mixture

into the bottom and up the sides of the pie plate. Freeze for 1 hour.
Using the skim milk, prepare the instant pudding according to the package
directions. Immediately pour the pudding into the prepared pie crust.
Refrigerate for at least one hour before serving. Serves 8. Pat Akers,

                                 Egg Nog

   1      3 ounce       pac  vanilla instant pudding
     1/2  cup           sugar
   8      cups          milk
   2      teaspoons     vanilla
     1/2  teaspoon      nutmeg

In a large bowl, mix all ingredients well. Serve chilled. Keeps well in
refrigerator. French vanilla or fat free vanilla work well too. This is
great and there is no raw egg to worry about. My kids love it. If you are
so inclined, it also "spikes" well. I like it better than the

                   Fruit Sauce For Pancakes Or Waffles

   2      cups          fresh or frozen fruit
     1/4  cup           sugar or to taste
   1      tablespoon    cornstarch
   1 1/2  cups          cold water

Place fruit (blueberries, cherries, peaches, etc...) and sugar in a 2
quart saucepan. Mix cornstarch into cold water and add to fruit. Heat over

medium heat, stirring frequently, until mixture thickens (about 5-10

                            Golden Potato Bake

   2      pounds        golden flesh potatoes -- thinly sliced
   1      medium        onion -- thinly sliced
   1                    red or yellow bell pepper -- cut into thin
                        -- strips
     1/4  teaspoon      white pepper
   1      tablespoon    chicken flavor bouillon
   1      tablespoon    Dijon mustard
   1      teaspoon      dried dill weed
   1 1/2  cups          hot water

Coat shallow 2 quart casserole with no stick cooking spray. Layer
potatoes, onion and bell pepper in prepared casserole, ending with layer
of potatoes. In 2-cup glass measure, stir together remaining ingredients.
Drizzle over vegetables. Cover and bake in 350 degree oven for 45 minutes.

Uncover and continue baking an additional 15 minutes or until potatoes are

                          Pineapple Plus Muffins

Spread English muffins with low fat cream cheese. Spoon crushed pineapple

                             Super Rice Salad

   2      cups          rice or orzo -- cooked
   1      can           corn niblets -- drained
   1      cup           frozen baby peas
     1/4  cup           red onion -- chopped
     1/2  cup           green pepper -- diced
     1/2  cup           red pepper -- diced
     1/2  cup           celery -- diced
     1/2  cup           pimineto olives -- sliced
   8      tablespoons   italian dressing

Combine all ingredients except salad dressing in a large bowl and toss
gently. Add dressing and toss again. Cover and refrigerate until ready to

                     Uncooked Tomato Sauce And Pasta

   1      pound         fresh tomatoes -- chopped
   2      teaspoons     mild olive oil
   1      tablespoon    onion -- chopped
   1      clove         garlic -- minced
     1/4  teaspoon      black pepper
   1      teaspoon      dried basil leaves
  12      ounces        cooked pasta
     1/2  cup           mozzarella cheese -- shredded
     1/2  cup           parmsan cheese -- grated
   1      small         red onion -- chopped
                        black olives -- chopped

Place tomatoes, olive oil, onion, garlic, black pepper and basil in a food

processor or blender and puree for 1-2 minutes until blended. Serve at
once over 12 ounces of hot pasta that has been cooked and tossed with the
mozzarella cheese and parmesan cheese. Garnish with raw red onion and

                          Yummy Yummy Fruit Dip

   1      large         cont  marshmallow fluff
   8      ounces        cream cheese -- low fat (Neufchatel
                        -- cheese)
                        assorted fruit -- cut into pieces

Combine fluff and cheese; beat with mixer until smooth. Put into bowl.
Arrange fruits around it and there it is! Serve cold on those hot summer
nights. Enjoy with melon, canteloupe, oranges, strawberries, pineapple,
