                               Ham in Cider

Recipe By     : Prodigy Food & Wine Board
Serving Size  : 4    Preparation Time :0:00
Categories    : Main Dishes                      Pork & Ham

Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
   1                    ready to serve ham,
1      small         enough to fit into crockpot
4      cups          apple juice or sweet cider -- to cover
   2      teaspoons     dry mustard
1      cup           firmly packed brown sugar
   1      teaspoon      ground cloves
   2      cups          golden seedless raisins

Place the ham with enough cider to cover in a crockpot and cook on low for 10 to 12 hours.  Before serving, remove ham and set aside.  Heat oven to 375°F.  Make a paste of the mustard, cloves and a scant tablespoon of the hot cider.  If there is one, remove the outer skin from the ham and smear the ham with the paste.  Place in a baking pan.  Pour in 1 cup of hot cider and the raisins.  Bake in the preheated oven 1/2 hour or just until the paste has turned to a glaze.  The cider will have reduced enough to make a flavorful raisin sauce for the ham.

NOTES : You can use all pork or all beef.  I found that the pork will cook faster than the beef, so I start the beef ahead of time then add the pork.

                        Pork in Spaghetti Sauce

One tip I have is that whenever I make a sauce for spaghetti.....lasanga..etc..I add FRESH pork (not just pork sausage) because it adds a wonderful sweetness to the sauce. You don't need to buy an expensive cut.  My girlfriend from High School (1952, San Diego High School) Mary Zizzo gave me the tip long ago. I also cook the sauce for at least 5 hours at a low temp. (pork butt is great) I was reading the recipes for the enchiladas so I made some last nite. I don't have crock pot so made these the usual way.
