   1      cup           cottage cheese
   1      4 oz can      chopped green chiles -- drained
   2      cups          shredded monterey jack cheese

Mix thoroughly all ingredients except 1 cup of the grated cheese.  Pour mixture into well-greased crock-pot.   Cover and cook on low setting for 6 to 9 hours.  Just before serving, sprinkle with reserved grated cheese.  6 to 8 servings

   2      teaspoons     seasoned salt (to taste)
   2      tablespoons   Worcestershire sauce
   2      cups          raw rice -- converted
   3      stalks        celery -- chopped

Brown beef in skillet and drain off fat.  Put all ingredients in crock pot.
Stir thoroughly.  Cover and cook on Low 7 to 9 hours or on High 3 hours.
Stir in cheese and sprinkle on top (if desired).

     1/2  gallon        milk*
   1      cup           uncooked rice
   1      cup           sugar
   3      tablespoons   cold margarine
     1/4  teaspoon      salt -- optional
   1      teaspoon      vanilla extract
     1/2  cup           dried apricots or peaches -- minced
     1/4  teaspoon      ground cinnamon

*Use half nonfat and half whole milk or all nonfat for lower fat content.  Can substitute evaporated milk for a very rich flavor.

The cooking time will vary greatly, anywhere from 1 1/2 to 3 1/2 hours.   The longer it cooks, the thicker it will be.

It is important to have the dried apricots minced.  Put all ingredients into the crockpot.  Stir to blend well.  Cover and cook on high for 1 1/2 hours; stir once after about an hour.  Or, cook on high for the first 30 minutes, turn to low and cook as long as desired.  Check after the first 2 hours of low cooking and stir.  If the rice is not absorbing the milk quickly enough, turn the crockpot up to high again.  Keep cover on at all times.
 Crockpot temperatures vary widely among different brands. Only experimentation can tell you the correct amount of time for cooking in your crockpot. Rarely will a crockpot recipe fail, though, as the long, slow cooking process does not require precise timing.

                        baking soda
                        oregeno

                        thyme
   2                    chopped onions

Place beans in large pot or Dutch oven and cover with baking soda and water.
Soak  for about 1/2 hour drain, rinse and repeat  the process 2 more times.

Place red beans, onions, garlic, tomat oes. bell pepper in crock pot.  Cover
with ground pepper, and herbs.  Fill crock pot about 3/4 full of water.
Cover and cook on low h eat all day.  About 1/2 hour before being done add a
chopped apple.

Cook Rice separately.

  We like a spicier (hotter) flavor and a moister casserole, so I
replace the tomato sauce with 2 tbsp Hot Thick & Chunky Salsa,

Place milk, rice and sugar and a pinch of salt into crockpot on High.  Cook for 1 and 1/2 hours.  Stir and at this time if you like raisins add   them, a couple of hands full and sprinkle in some cinnamon.  Cook for another 1 1/2 hours, keeping a check on the last hour stirring often.   As soon as it starts to thicken turn it off, if you like it real creamy.  Let cook longer if you like it thick.  It will thicken a lot after it cools.  I use skim milk, omit the butter, and sometimes if I have it on hand add a can of evaporated milk, gives a little creamier taste, but either way it is just as good this way and a lot less fat etc.

Combine rice with all ingredients except orange sections.  Mix well.   Lightly butter crockpot.  Pour in rice mixture.  Cover and cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours.  Stir during first 30 minutes.  During last half-hour, stir in orange sections.

  1.  In a 4-quart electric slow cooker, mix together the corn, black
  beans, green chiles, onion, bell pepper, rice, boiling water, orange
  juice concentrate, 1/4 cup of the lime juice, the cumin, and the
  chili powder.
 
  2.  Cover and cook on the low heat setting 2 3/4 to 3 hours.  Stir in
  the remaining 2 T lime juice, the cilantro, and salt.  Mix well.
  Serve hot.

Soak beans in water overnight in crock pot. Add onions, peppers, celery, tomatoes, and seasonings (except salt) and enough water to cover beans. Stir. Cook in crock pot on high 8 hours. Add sausage about 1/2 way through cooking period. Stir in salt just before serving (after beans are softened)
*On stove, simmer slowly until done.
Stir and check seasonings whenever able. Stir in salt before serving.
Serve over rice.

   1 1/2  teaspoons     grated lemon rind
   1      teaspoon      ground nutmeg
   2      tablespoons   butter or margarine
   3      tablespoons   bourbon or dark rum
     1/2  cup           sweetened whipped cream

Warm the milk and pour it over the rice.  Into the eggs, beat the sugar, vanilla, raisins, and lemon rind.  Stir the milk and rice into the egg mixture.  Scrape into the slow cooker.  Sprinkle with nutmeg and dot with butter.  Cover and cook on Low for 4 to 6 hours.   Turn into a serving bowl and stir in the bourbon. Serve the pudding lukewarm with a dollop of sweetened whipped cream on top.  Makes 6 to 8 servings.

   2      cans          (8 oz.) mushrooms -- drained or fresh
   3      cans          cream of potato soup
   1      pint          half and half
     3/4  cup           white wine (or increase water
     3/4  cup           if you prefer)
   1      cup           water
     1/2  cup           raw wild rice -- cooked , (up to 1)
   2      cups          shredded american cheese
                        salt and pepper to taste

Combine ingredients including the cooked wild rice. Place in slow cooker on low. Leftovers may be frozen.
