   2      drops         bottled hot pepper sauce

     1/4  cup           vinegar

   1      tablespoon    minced onions

Combine ingredients in slow-cooking pot. cover and cook on low 2 to 3 hours. Makes 2 to 2 1/4 cups sauce. Good on spareribs, chicken, pork chops, sliced roast beef.

                        apples, cut up, to fill 3 1/2 qt. crockpot
   1      cup           brown sugar
   1      cup           apple cider
                        juice of 1 lemon
   1      tablespoon    cinnamon

Cut blemishes off apples and cut into chunks to fill 3 1/2 qt. crockpot. Add sugar, cider and lemon juice. Cover and cook on Low for 8 hours. Stir. Add cinnamon and cook another 10 hours. Stir occasionally until brown. Run through Food mil or any strainer to strain out seeds and skins. I used the blender. To thicken, if not thick enough, return to slow cooker and cook on High uncovered until desired consistency.b Makes 3-4 pints.

Sherilyn's Notes:  I adapted this recipe from "A Jewish Mother's Cookbook".   Modified recipe:  The amount of apples fills my crockpot.  I cooked the apple butter on high most of the time leaving the lid on until the apples begin bubbling and then removing the lid and continue cooking uncovered for approximately 8 hours.  The apple butter will turn a very nice rich brown colour.  Apples:  wash and leave skins on--cut in quarters, removing core and seeds.  Approximately 5 hours or so after cooking when the skins are fully broken down--I put apple butter through a sieve or collander and strained and discarded the apple skins.  The apple butter is returned to the crockpot and continue cooking until desired consistency.  Yield: approximately 2 1/2 pints.  Freezes well or process in canner.

Sherilyn's Notes:  I substituted 1/3 cup maple syrup and reduced sugar in recipe from 2 1/4 cups to 2 cups.  I also substituted brown sugar for white sugar.  I added spices:  1/2 tsp allspice, 3/4 tsp cinnamon and 1/4 tsp cloves.  (June, 1998)

Combine cranberries, apples and sugar in slow cooker.  Place cinnamon and cloves in center of 6" square of cheesecloth.  Pull up around sides; tie to form pouch.  Place in pot.  Cover and cook on LOW 4-5 hrs or until cranberries and apples are very soft.  Yield: 3 cups.

     1/4  cup           chopped onions
   1      clove         garlic -- minced
   2      tablespoons   parsley

   1      pound         ground chuck or mild Italian sausage
   2      (6 oz.) cans  tomato paste
   2      large   cans  tomato puree (2 lb. 3 oz.)
   2      teaspoons     oregano leaves
   1      teaspoon      basil
     1/4  teaspoon      pepper
   1      (4 oz.) can   mushroom stems & pieces, drain
     1/4  cup           dry red wine
 

 Saute onions and meat until not red or pink.  Drain.  Combine meat and remaining ingredients in crock pot, cover, set on low.  Cook 8 hours.  Sauce can be frozen and used for all types of pasta (i.e. ravioli, lasagna, tortellini, etc.).

   1      tablespoon    dry basil
   2      teaspoons     seasoned salt
   1      large         carrots -- shredded

Heat oil in crock pot then add onion and carrot and garlic.  Saute on high until transparent.  Add tomatoes and seasonings (basil and seasoned salt) and add 1 can of water (or dry red wine) from the 18 ounce can that had the paste in it.  Cook on low all day.

Mix all ingredients in crock pot, excluding the corn starch. Cook on high 8 hours. Approximately 1 hour before done, mix corn starch with 1/2 cup water and add to crock pot mixture. Finish cooking. Cool and put in resealable bags or seal in jars.

                        CROCKPOT  SPAGHETTI  SAUCE

   4      tablespoons   cooking oil
   1      small         onion -- finely chopped
   1                    (15 1/2 oz.) tomato sauce
   1 1/2  cups          water
     1/2  teaspoon      pepper
     1/2  teaspoon      red pepper -- optional
   1      pound         ground beef
   1      (29 oz.) can  tomato puree
   1      (6 oz.) can   tomato paste
   1      teaspoon      salt
     1/2  teaspoon      oregano
   2      pounds        sausage (Italian links or country style)
 

 Brown ground beef in 2 tablespoon hot oil in frying pan.  When almost browned, add onion and continue browning until onion is tender.  Pour meat and onion into 3 1/2 quart crockpot.

 Add puree, sauce, paste, water, salt, pepper and oregano and set dial on low setting.  Cut 2 lbs. sausage into pieces and brown in remaining 2 tablespoons oil.  When brown, place sausages in sauce in crockpot.
Continue cooking for 12 hours.  (If you like your sauce sweeter, you could add 1/4 to 1/2 cup sugar to this.)

               CROCKPOT APPLESAUCE WITH CRANBERRIES (VEGAN)

  10                    12 medium apples
   1                    To 2 cups cranberry juice
     1/2                Lemon juiced
   2       tb           Sugar, or up to 1/4cup if

                        Or "craisins" (sweetened
                        Dried
                        Cranberries)

  Wash the apples and chop them up without peeling.
  Squeeze lemon juice over them as you cut them.
 
  Put apples in crockpot with cranberry juice -- use 1
  cup if you want the applesauce thick, more if you want
  it thin.  Stir in sugar to suit your taste.
 
  Let apples stew on low for 6-8 hours.  About an hour
  or two before serving, stir in cranberries or
  craisins.  (All I found at my store was
  craisins--since they're sweetened, I used less sugar.)
 
  The applesauce is a very pretty pink and the
  cranberries & juice give it a nice zing.
 
  As you can see, the recipe is simple and forgiving --
  let the apples stew a little longer or a little less
  ~- the longer you stew them the mushier the applesauce
  will be.  It warms up nicely, or you can eat it cold.

Brown hamburger with onion, bell pepper and garlic.  Drain well and put into crockpot with all other ingredients.  Have crockpot on high until sauce comes to a boil and then turn it to low and simmer for 6 hours.

Combine all ingredients in lightly oiled crock pot.  Cover and cook on low setting for 6 to 12 hours ( on high setting for 4 hours).  If a thicker sauce is desired, remove cover and cook on high setting until sauce is reduced.
This is good used in any recipe calling for tomato sauce.

                          Greek-Style Meat Sauce

   4      pounds        lean ground beef
   2      tablespoons   olive oil
   4      medium        onions -- finely chopped
   4      6 oz cans     tomato paste
   4      cloves        garlic -- minced
   1      teaspoon      mixed pickling spice
   1      cup           dry white wine
   1      tablespoon    salt
                        freshly ground pepper -- to taste

Using a large frying pan, brown meat in 1 tablespoon olive oil until it loses its pink color.   Transfer to crockery pot.    Add remaining olive oil to pan.  Saute onions until glazed. Transfer to crockery pot. Add tomato paste, garlic, pickling spice, (put in a tea ball or tie in a cheesecloth bag), wine, salt, and pepper. Cover. Cook on LOW 8 hours. Stir  once or twice.  Cool slightly.   Ladle into freezer containers, or serve hot. Makes about 3 quarts.

   1      6 oz can      sliced mushrooms, -- undrained
     1/4  cup           fresh lemon juice

Place meat, onion, green pepper and garlic into a large heated saucepan.  Cook until meat loses its pink color.  Remove mixture with a slotted spoon and put into a crockpot.  Add brown sugar,  seasonings, tomato sauce and tomato paste; mix well.  Cover and cook on low 8 to 10 hours.  Stir in mushrooms, lemon peel and lemon juice; heat thoroughly.  Spoon sauce over hot spaghetti and accompany with grated Parmesan cheese.

Combine all ingredients in heavy saucepan (Note:  it takes a lot longer, but I prefer to use a crockpot).  Bring to a boil and cook uncovered over low heat until thickened--approximately 30 minutes in heavy saucepan.  If using crockpot, simmer on low 4 - 5 hours.  Stir often.  Pack into hot sterilized jars and seal.  Yield:  2 - 3 pints.

Sherilyn's Notes:  The original recipe was for "Peach Chutney".  This recipe was part of my 1970's card collection--uncertain of original source. I substituted mangos and used apple cider vinegar.  This recipe would be nice to use for gifts.  Definitely a great recipe!  (July 1998).

Place tomatoes in batches in blender container; blend until smooth (or puree tomatoes through a food mill).
In skillet, saute onion carrots and garlic in oil just until tender (do not brown).  Combine all ingredients in crock pot; stir well.  Cover and cook on low setting for 6 to 10 hours.  Remove cover, stir well and cook on high setting for the last hour fo

One tip I have is that whenever I make a sauce for spaghetti.....lasanga..etc..I add FRESH pork (not just pork sausage) because it adds a wonderful sweetness to the sauce.You don't need to buy an expensive cut.  My girlfriend from High School (1952, San Diego High School) Mary Zizzo gave me the tip long ago. I also cook the sauce for at least 5 hours at a low temp. (pork butt is great) I was reading the recipes for the enchiladas so I made some last nite.                         Hot cooked spaghetti

In a skillet cook ground beef, sausage, onion, and garlic until meat is brown and onion is tender; drain off fat.

Meanwhile in crockpot, combine undrained tomatoes, tomato sauce, mushrooms, green pepper, tapioca, bay leaves, oregano, basil, pepper, and salt. Stir in browned meat mixture.

Cover; cook on low-heat setting for 10-12 hours or high heat setting for 5-6 hours. Remove bay leaves. Serve over hot spaghetti.    1      pound         lean ground beef
   1      28 oz can     tomato puree
   1      6 oz can      tomato paste
   1      teaspoon      salt
   1      teaspoon      dried basil -- crushed
     1/2  teaspoon      dried oregano -- crushed
   2      pounds        Italian sausage links -- cut in 1" pieces
   1      pound         fresh mushrooms -- sliced
   1      cup           finely chopped green bell pepper -- optional

*or substitute 3/4 cup water and 3/4 cup dry red wine.

Brown and crumble ground beef in 2 tablespoons hot oil in frying pan.   When almost browned, add onion and continue browning until onion is tender.  Pour meat and onion into crockpot.   Add puree, sauce, paste, water, salt, pepper and oregano and set dial on low setting.   Cut 2 pounds sausage into pieces and brown in remaining 2 tablespoons oil.  When brown, place sausages in sauce in crockpot. Continue cooking for 12 hours.  (If you like your sauce sweeter, you could add 1/4 to 1/2 cup sugar to this.)

                         Tomato Sauce - Crock Pot

Heat oil in crock pot then add onion and carrot and garlic. Saute on high until transparent. Add tomatoes and seasonings (basil and seasoned salt) and add 1 can of water (or dry red wine) from the 18 ounce can that had the paste in it. Cook on low all day.
