CHICKEN AND SAUSAGE GUMBO (CROCKPOT)

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 c All-purpose flour 1/3 c Cooking oil 3 c Water 12 oz Fully cooked smoked sausage -links, sliced and -quartered 2 c Chopped cooked chicken 2 c Sliced okra OR one 10-oz -package frozen whole okra, -sliced 1/2 Inch thick 1 c Chopped onion 1/2 c Chopped green pepper 1/2 c Chopped celery 4 Cloves garlic, minced 1 t Salt 1/2 ts Pepper 1/4 ts Ground red pepper -Hot cooked rice
For roux, in a heavy 2-quart saucepan stir together flour and oil till smooth. Cook over medium-high heat 5 minutes, stirring constantly. Reduce heat to medium. Cook and stir constantly about 15 minutes more or till a dark, reddish brown roux forms. Cool.
In a 3 1/2, 4-, 5-, or 6-quart crockery cooker place water. Stir in roux. Add sausage, chicken, okra, onion, green pepper, celery, garlic, salt, pepper, and red pepper. Cover; cook on low-heat setting for 10-12 hours or on high-heat setting for 4 1/2 to 5 hours. Skim off fat. Serve over rice. Makes 6 servings.

1 1/2 lb Pork shoulder 1 lb Knackwurst 1 lb Italian sausage 1 lb Bacon 3 lb Sauerkraut 8 Juniper berries 2 tb Gin 1/2 c Wine, white
An Alsatian sauerkraut and meat dish
Polish sausage may be substituted for Italian sausage.
Cover bacon strips with boiling water; set aside Cut pork into 1" chunks. Slice knackwurst and Italian sausages in half. Combine pork, knackwurst, and sausages and set aside. Drain sauerkraut, rinse in cold water and squeeze dry. Drain bacon and pat dry. Chop bacon. Mix into sauerkraut and add crushed juniper berries and gin. Add half of sauerkraut mixture to crockpot, then add mixed meats and remaining sauerkraut, sprinkling with pepper as you go. Pour wine over all and cover. Cook about 2 hours on High.
Turn into warmed serving bowl. Sprinkle with parsley. Serve with boiled potatoes. Pass around mustard or horseradish, if you wish.
Sylvia's comments: cook on HIGH? In a crockpot? Then what's the point? I cooked it all day on LOW and everything was falling apart. I have a similar recipe that includes apples and brown sugar that I like better; this is great for someone who favors bitter tastes, I served it with applesauce which cut the bitterness well and the result was delicious.

Crocked Kielbasa

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound Lean ground beef 1 pound Kielbasa sausage -- sliced 1 28 ounce Ca whole tomatoes undrained 9 ounces Frozen French-cut Green beans 1 6 ounces Can pitted black olives (drained and left whole 1/2 cup Red wine 3 Garlic cloves -- minced 1 medium Onion -- sliced 1 medium Green pepper -- chopped 1 teaspoon Basil -- crushed 1 teaspoon Oregano -- crushed 1/2 teaspoon Thyme -- crushed 1/4 teaspoon Pepper 1 pound Pasta of your choice 4 ounces Parmesan -- freshly grated
In a medium skillet, saute ground beef. When browned, transfer to crockpot. Add all other ingredients except pasta and parmesan Simmer on low for 6-8 hours. Cook pasta according to directions. Ladle crocked Kielbasa over pasta in large bowls. Pass the Parmesan cheese to garnish..

Crockpot Sweet/Sour Kraut with Pork Chops

Put potatoes in crockpot. Top with chopped onion. Combine sauerkraut, (1 can) with brown sugar and pineapple juice. Spoon over potatoes. Top with pork chops which have been trimmed of fat. Season with pepper to taste. Cover and cook on low 8-10 hours.
Serve with rye bread and microwave baked apples.

Low-Fat Country Sausage Patties

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lb Ground turkey -- beefalo, or -extra lean beef or pork 1/2 c Breadcrumbs 2 cl Garlic -- minced 2 tb Fresh parsley -- finely -chopped or 2 ts Dried parsley 1 t Thyme 1 t Sage 1/2 ts Marjoram 1/2 ts Salt 1/4 ts Fresh ground pepper 3/4 ts Crushed hot red pepper Nonstick cooking spray
Combine all ingredients and form into 8 patties. "Fry" in a Teflon pan coated with nonstick cooking spray until brown and crisp on both sides, about 20 min. Add a little water during cooking if patties begin to stick.
Variation: Add chopped onions and mushrooms and shape into one meatloaf and bake.
Per single patty serving using turkey: 7.2 g fat, 2.0 g saturated fat, 35 mg chol., and 221 mg salt.

Add all ingredients to crock. Cover with sauce. Cook 3-5 hours on high or 5-7 hours on low.
In this recipe lingui#am a Portuguese sausage, is used. It's delicious in chili or on pizza.

Peg's Polska Bean Soup

Throw it all into the crockpot, cover with water and cook about 10 hours. I usually start on high for about an hour or two and then turn on low and let cook overnight.

Polish Kraut 'n Apples

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound fresh or canned sauerkraut 1 pound lean smoked Polish sausage 3 tart cooking apples -- thickly sliced 1/2 cup packed brown sugar 3/4 teaspoon salt 1/8 teaspoon pepper 1/2 teaspoon caraway seeds -- (optional) 3/4 cup apple juice or cider
Rinse sauerkraut and squeeze dry. Place half of the sauerkraut in a slow cooker. Cut sausage into 2-inch lengths. Place in slow cooker. (I've made this with bratwurst -- cooking it before putting in crockpot) Continue to layer in slow cooker, in order, apples, brown sugar, salt, pepper and, if desired, caraway seeds (I never use them). Top with remaining sauerkraut. Add apple juice. DO NOT STIR. Cover and cook on high for 3 to 3-1/2 hours or on low for 6 to 7 hours or until apples are tender. Stir before serving.

Sausage and Beans with Potatoes

Peel potatoes and cut into chunks. (Similar to the chunks you would place in stew). Put the potatoes into the bottom of your crockpot. Peel and slice the onion and lay onions on top of potatoes. Wash and prepare the fresh green beans. Place on top of the onion. Add approximately 1 cup of water to the crockpot. Slice the smoked sausage into slices or four large portions and place on top of green beans. Turn the crockpot on a medium setting and cook all day. Approximately 8 hours. This turns into a delicious one pot meal for a busy day.
