                    Apple-Raisin Whole-Wheat Stuffing

  12      cups          Whole-wheat bread -- cubed
   1 1/2  cups          Raisins
   4                    Apples -- * see note
   1 1/2  cups          Onion -- finely chop
   4      cups          Celery -- sliced thin
   3                    Eggs (or use egg whites)
   1      cup           Walnuts or pecans -- chopped
   4      tablespoons   Margarine -- melted
   2 1/2  cups          Chicken broth
     1/2  teaspoon      Black pepper -- freshly ground

  * chopped, unpeeled apples. If the bread is not stale, spread the slices  out on a rack or counter for half a day to dry them out.  Then cut into cubes.  Combine the bread cubes with the remaining ingredients.  Stuff the  turkey or bake in a covered oven-proof dish for about 40 minutes at 325 (or whatever temperature you are using for your turkey)  OR  put into Crockpot and cook on high for 2 hours then low for 4 hours.

                        Chris' Crock Pot Dressing

   1                    cornbread (8-inch pan)
   8      slices        day old bread -- toasted and cubed
   4                    eggs
   1      medium        onion
     1/2  cup           chopped celery
   1      teaspoon      sage or poultry seasoning -- (up to 2)
     1/2  teaspoon      black pepper
   2      cans          cream of chicken soup
   2      tablespoons   butter or margarine

Lightly grease crock pot. Crumble cornbread into mixer bowl. Add all ingredients except butter. Pour mixture into crock pot. Dot top with butter. Cook on high 2 hours or on low 3-4 hours.

   1      large   bag   dried stuffing mix

     1/2  cup           chicken broth
   2                    beaten        eggs
 

 Grease crock pot.  Saute onion, celery, parsley and mushrooms in butter.  Put stuffing mix in crock pot.  Add all ingredients except broth.  Add liquid to preference.  Cook on high 1 hour and 4-6 hours on low.

Mix ingredients except butter.  Place in crock pot.  Dot butter on top.

   2      cups          Celery -- chopped
     1/4  cup           Parsley sprigs
   2      cups          Mushrooms, 8 oz. -- drained
  12      cups          Bread cubes -- slightly dry
   1      teaspoon      Poultry seasoning
   2                    Eggs -- well beaten
   1 1/2  teaspoons     Salt
   1 1/2  teaspoons     Sage
   1      teaspoon      Thyme
     1/2  teaspoon      Pepper
     1/2  teaspoon      Marjoram -- optional
   3 1/2  cups          Chicken broth or turkey broth

  Melt butter in a skillet and saute onion, celery, parsley, and mushrooms.  Pour over bread cubes in a very large mixing bowl. Add all seasonings and toss well.   Pour in enough broth to moisten.  Add eggs and mix well.  Pack lightly into Crockpot.    Cover and set to  high for 45 minutes then reduce to low to cook for 4 to 8 hours.  This  recipe is from the Rival Crock Pot Cookbook.  I have enjoyed this many times at a friend's house. Using this recipe, I'll bet you can modify your own to work perfectly in the crockpot. Sure saves oven space in Thanksgiving!

                           Slow Cooker Stuffing

   1      stick         butter or margarine
   1      cup           onion -- finely chopped
   1      cup           celery -- finely chopped
   1      can           mushrooms -- (8 ounce) drained
     1/4  cup           parsley -- chopped
   1 1/2  teaspoons     poultry seasoning
     1/2  teaspoon      salt
     1/8  teaspoon      pepper
  12      cups          toasted bread cubes
   2                    eggs -- well beaten
   1 1/2  cups          chicken bouillon

    Melt butter in skillet.  Add onion and celery and saute until tender.  Stir in mushrooms and parsley.  Combine seasonings and sprinkle over bread  cubes.  Add eggs, bouillon and onion mixture.  Toss thoroughly until well  combined.  Spoon lightly into slow cooker.  Cover and set on high for 1 hour, then reduce to low and cook for 1 to 2 hours. 22 bread slices (24 ounce loaf) cubed and toasted for 15 minutes in a 300 oven = 12 cups toasted bread cubes.                         Slow-Cooker Sage Dressing

   7      cups          Dry bread cubes or unseasond
                        croutons
   1      cup           Freshly chopped onion
   1      cup           Chopped celery
   3      cups          Apple; chopped -- unpeeled
     1/4  cup           Fresh parsley -- minced
   1      teaspoon      Salt
     1/4  teaspoon      Paprika
     1/2  teaspoon      Rubbed sage
     1/2  teaspoon      Dried thyme
   1      cup           To 1/12 turkey stock or
                        chicken broth

   Rub walls of slow-cooker with margarine.  Combine remaining ingredients  and pour into slow cooker.  Cover and cook on high setting for one hour, stir well; cook on low 2-3 hours.  116 cal per serving.

Pour in enough broth to moisten, add beaten eggs and mix together well. Pack lightly into crock-pot, cover and set to high for 45 minutes, then reduce to low to cook for 4 to 8 hours.
