   1      Tablespoon    vinegar
   1                    egg -- beaten
     1/4  Cup           seasoned bread crumbs -- fine
   2      Tablespoons   milk
     1/4  Teaspoon      garlic salt
   1      Pound         ground turkey -- raw
                        non-stick veg. spray

In 3 1/2 or 4 quart crockery cooker: stir together barbeque sauce, jelly, tapioca and vinegar. Cover; cook on high-heat setting while preparing meatballs. For meatballs, in large bowl combine egg, bread crumbs, milk and garlic salt. Add ground turkey and mix well. Shape into 1/2 to 3/4-inch meatballs. Spray a 12-inch non-stick skillet; add meatballs and brown on all sides over med. heat. Drain meatballs. Add meatballs to crockery cooker; stir gently. Cover; cook on high heat setting for 1 1/2 to 2 hours. Makes 30 meatballs. NOTE: for 5 or 6-quart crockpot: Double all ingredients. Prepare as above. Makes 60 meatballs.    2      tablespoons   cornstarch
     3/4  cup           orange marmalade
   1      cup           fresh cranberries -- ground and chopped
   2      pounds        frozen turkey roll -- partially thawed
                        salt and pepper

In small saucepan, blend sugar and cornstarch; stir in marmalade and cranberries. Cook and stir until mixture is bubbly and slightly thickened. Place partially thawed turkey roll in slow-cooking pot. Sprinkle lightly with salt and pepper. Pour sauce over turkey. Cover and cook on low for 9 to 10 hours. (Insert meat thermometer in turkey roll the last 2 or 3 hours; cover and cook until temperature reaches 185 F) Slice turkey roll; spoon sauce over. busted by sooz

                        CROCK - POT  TURKEY  SOUP

                        Carcass -- wings & bones of 1 l
   2      stalks        celery with leaves
   2                    carrots -- cut in chunks
   2                    bay           leaves
     1/2  teaspoon      basil
     1/2  teaspoon      marjoram

Remove all meat from the bones and carcass and refrigerate.  Break bones and carcass up into pieces small enough to fit into a 4 or 5 quart crock pot.  Add remaining ingredients and 3 quarts of water.  Cover and simmer on the low setting for 24 hours.  Strain broth, and refrigerate overnight in a clean bowl.  Discard vegetables and bones.

 The next day, remove the fat that has congealed on the surface of the broth.
Place in a large kettle and bring slowly to the boil.  Add:

 Õ1 1/2 c. chopped celery 1 1/2 c. chopped carrots 1/2 c. chopped parsley Õ Simmer for 15 minutes.  Add 3/4 cup parsley and simmer for another 15 minutes or so.  Salt and pepper to taste and add 1 cup noodles or other small soup pasta.  Simmer until the pasta, barley and vegetables are tender.  Add 1 to 2 cups leftover turkey (or however much you need to get rid of) and return to boiling.  Makes approximately 3 to 4 quarts and freezes well.

                          Crock Pot Turkey Dill

   1      cup           sour cream
   1      teaspoon      dill weed

Sprinkle both sides with salt, pepper and 1 teaspoon dill. Place in slow cooking crock pot. Add water and vinegar. Cover and cook on low for 7 to 9 hours or until tender. Remove meat. Turn crock pot to high. Dissolve flour in small amount of cold water and stir in meat drippings from pot. Add the second teaspoon of dill weed. Cook on high until slightly thickened, about 10 minutes. Stir in sour cream. Turn off heat. Slice meat and serve with sauce. Serves 6-7.

Cut turkey at joints. Discard wing tip. Brown wing pieces in small amount of oil. Place in crock pot. Mix soup and water together and pour over turkey, try to cover turkey so soup lays on the meat. Cook for 5 to 6 hours on High or until done. The soup makes very good gravy. busted by sooz

Put turkey in crockpot (I put mine in frozen) add can of chicken broth. Turn crockpot on LOW. Several hours later I put in the carrots, potatoes and onion (You decide on the quanity you want). I cooked it all day (about 8 to 10 hours) Slice the turkey. Make gravy with the liquid in the bottom of the crockpot ( I use two gravy pakets mized with one cup water and one cup liquid from the crockpot.) put the veggies in a dish and serve.

                        dry H.V. ranch salad dressing mix -- *

 Simply slice an onion and place it on the bottom of the Crock pot.  Then, remove the skin from the turkey breast, season well with garlic powder, pepper and any other spice (no salt, though. It tends to dry out the meat). Turn on low for eight hours.
(perfect for week-days coming home from work) and enjoy. Don't forget to let the breast rest for twenty to thirty minutes before carving.

                        Ground Turkey Pasta Sauce

     1/4  cup           olive oil
   1      pound         ground turkey
   2      cloves        crushed garlic
   1                    bay leaf
   1                    finely chopped onion
   1                    bell pepper -- chopped
   1      cup           chopped mushrooms
   1      can           (16 oz.) stewed tomatoes
   1      can           (8 oz.) tomato paste
     1/2  teaspoon      dry thyme
   2      teaspoons     fresh basil or
                        half the amount dried
     1/2  teaspoon      oregano

Put half the oil on frying pan, add turkey; brown slowly. While meat is frying, put stewed tomatoes, tomato paste, thyme, basil, oregano, salt and sugar in crockpot. Stir well and cook on low heat. When turkey is brown (do not overcook, turkey will finish cooking in sauce) add to crock pot. Using the rest of the oil, fry onion, pepper, garlic and bay leaf until softened. Add to crock pot with 1 cup of water and the raw, chopped mushrooms. Cook on low 4 hours or more. Serve with your favorite pasta.

     3/4  cup           crushed butter-flavor crackers
     1/2  cup           mozzarella cheese -- shredded
     1/4  cup           onion -- chopped
     1/2  teaspoon      ground ginger
   6      Tablespoons   Dijon mustard -- divided
   1 1/4  cups          unsweetened pineapple juice
     1/4  cup           green pepper -- chopped
   2      Tablespoons   honey
   1      Tablespoon    cornstarch
     1/4  teaspoon      onion powder

In a bowl, combine turkey, egg, cracker crumbs, cheese, onion, ginger and 3
Tablespoon mustard. Form into 30 balls, 1" each. Place in  a grease 13x9x2"
baking dish. Bake, uncovered, at 350 degrees for 20-25  minutes or until
juice run clear. In a saucepan, combine pineapple juice, green pepper,
honey, cornstarch and onion powder; bring to a boil, stirring  constantly.
Cook and  stir 2 minutes more; reduce heat. Stir in remaining mustard until
smooth. Brush  meatballs with about 1/4 cup sauce and return to the oven for
10 minutes. Serve remaining sauce as a dip for meatballs.

   1      teaspoon      rosemary

                        paprika
                        ---Creamy Sauce---
                        drippings
                        fat
                        milk
     1/3  cup           all-purpose flour
     1/2  teaspoon      tarragon
     1/4  teaspoon      salt
   1      dash          pepper

Place turkey breast skin side up in 5 quart slow cooker. Combine soup,  bouillon or wine and seasonings and pour over turkey breast.  Sprinkle with paprika.  Cover and cook on high setting for 1 hour then turn to low setting for 6 to 7 hours.  Internal temperature of breast should reach 170  when done. Slice and serve with creamy sauce. Sauce:  Pour drippings into large  liquid measure.  Spoon 3 tablespoons fat into saucepan.  Remove any remaining fat from drippings.  To the drippings, add enough milk to make 3 cups.   Blend flour into fat.  Gradually add liquid and seasonings. Stir and cook over medium heat 8 to 10 minutes or until thickened into smooth sauce.

     1/4  teaspoon      tarragon
                        paprika
     1/4  cup           sherry or dry white wine
     1/2  teaspoon      salt
     1/8  teaspoon      white pepper
                        ---Mushroom Sauce---
                        drippings
   1      can           mushrooms -- undrained
   2      tablespoons   cornstarch
     1/4  cup           water or sherry wine
     1/4  teaspoon      tarragon
                        salt and pepper

Rinse turkey breast, drain well and pat dry with paper towel.  Place, skin side up in slow cooker.  Brush with butter.  Sprinkle with parsley, tarragon and paprika.  Add wine, salt and pepper.  Cover and cook on high setting for 1 hour, then turn to low setting for 6 to 7 hours.  Internal temperature of  breast should reach 170 when done.  Slice and serve with mushroom sauce. Sauce:  Strain drippings from slow cooker into  large liquid measure.  Spoon off fat.  Add mushrooms to drippings and  enough water to make 1 - 3/4 cupfuls.  Dissolve cornstarch in water or  wine and stir into drippings.  Pour into saucepan, add tarragon and season  to taste with salt and pepper.  Cook over medium to low heat, stirring constantly, until thickened and clear.

                          Stuffed Turkey Breast

     1/4  cup           melted butter
   1      small         onion -- finely chopped
     1/2  cup           celery -- finely chopped
   1      2 1/2 ounce   bacon croutons
   1      cup           chicken bouillon
   2      tablespoons   fresh minced parsley
     1/2  teaspoon      poultry seasoning
   1      whole         uncooked turkey breast (~5 lbs.)
                        salt and pepper
   2      4x36 inches   cheesecloth
                        dry white wine

Combine butter, onion, celery, croutons, boullion, parsley, and poultry seasoning. Cut turkey breast in thick slices, from breastbone to rib cage, leaving slices attached to bone. Sprinkle turkey with salt and pepper. Soak cheesecloth in wine. Set turkey on cheesecloth. Stuff bread mixture into slits of turkey. Fold one end of cheesecloth over other to cover meat. Place on metal rack or trivet in slow-cooking pot. Cover pot and cook on low 7 to 9 hours or until tender. Pour additional wine over turkey during cooking. Remove from pot and take cheesecloth off immediately. If browner breast is preferred, remove from pot and brown in 400 F oven for 15 to 20 minutes. Let stand 10 minutes. Drippings may be thickened for gravy if desired. Serve each person one or more thick slices of turkey with dressing in between.

Separate wings at joints and discard tips. In slow-cooking pot, combine wings, broth, celery, and salt. Cover and cook on low for 4 to 6 hours or until tender. Drain, saving 1 1/2 cups broth for sauce. In large skillet, combine cornstarch, brown sugar, 1 1/2 cups broth, vinegar, soy sauce, and chili sauce. Cook and stir until thick and clear. Stir in green pepper and pineapple; simmer for 2 minutes. Add drained, cooked wings. Bring to simmer. Serve over rice.

If needed, add 1/4 to 1/3 cup instant-mixing flour to juices in liner. Cook on high 15-20 minutes to thicken.

   1      20 ounce can  pineapple chunks in juice
   1      large         green bell pepper -- in 1" squares
   1      medium        red bell pepper -- in 1" squares

     1/4  cup           catsup
   3      tablespoons   red wine vinegar
   3      tablespoons   brown sugar
   2      pounds        skinless boneless turkey breast
     1/4  teaspoon      seasoned salt
   1 1/2  tablespoons   cornstarch
   2      10 oz. pkgs.  pea pods, frozen -- thawed and drained
   2      large         tomatoes -- cut in wedges

Drain the pineapple chunks, reserving 3 Tbps. juice. In a 3 1/2-4 quart
electric slow cooker, combine half the drained pineapple chunks with the
green and red pepper, onion and 2 Tbsps. each catsup, vinegar and brown
sugar. Mix well. Add the turkey breast, sprinkle with seasoned salt. Top
with the remaining pineapple chunks. Cover and cook on High heat setting 3
1/2 -4 hours or until the turkey is cooked through, tender and white in the
center. Remove the turkey breast. Stir in the remaining 2 Tbsps. catsup, 1 T. vinegar and 1 T. brown sugar.
Dissolve the cornstarch in the reserved 3 T. pineapple juice and stir into
sauce. Cover and cook on High 20-30 minutes longer, or until slightly
thickened, stirring once. Stir in the snow peas and tomato wedges and heat 5 minutes longer. Carve

     3/4  teaspoon      gumbo file powder
   2      cloves        garlic -- minced
                        cooked rice
   1      can           tomato paste -- (8 ounces)

Melt the margarine in a large skillet.  Add the okra.  Saute until the okra loses its shiny appearance, about 5 minutes.  Remove the okra pieces to a bowl.  Add the celery onion, green pepper, and garlic to the skillet.  Cook over medium heat until the onion is transparent.  Add the tomato paste, tomatoes, water, okra mixture, and turkey.  Cook over low heat 10 minutes or until turkey is hot.  Add the file powder.  Stir to blend. Spoon over the rice in soup bowls.

                        Non-stick veg. spray

     In 3 1/2 or 4 quart crockery cooker: stir together barbeque sauce, jelly, tapioca and vinegar. Cover; cook on high-heat setting while preparing meatballs.     For meatballs, in large bowl combine egg, bread crumbs, milk and garlic salt. Add ground turkey and mix well.  Shape into 1/2 to 3/4-inch meatballs. Spray a 12-inch non-stick skillet; add meatballs and brown on all sides over med. heat. Drain meatballs. Add meatballs to crockery cooker; stir gently. Cover; cook on high heat setting for 1 1/2 to 2 hours.  Makes 30 meatballs. NOTE: for 5 or 6-quart crockpot: Double all  ingredients. Prepare as above. Set on low and cook until tender or 6 hours. Turn control to high, add cheese and stir until cheese melts. Place in shallow casserole to serve. Spoon on sour cream. Sprinkle on green onions and garnish with sliced ripe olives.

                     Turkey with Stuffing in the Pot

     1/2  cup           water or chicken stock
   1                    boneless turkey breast

Place the turkey breast in the crockpot with a small amount of water or bouillon.  Prepare stuffing mix and pack on or around turkey, patting down,  but not packing it tight. Cover and cook on LOW 8 to 10 hours, or until turkey is very tender.  If the dressing gets too soggy, remove it and spread in a shallow pan. Bake in a 400° F oven for about 30 minutes, or until brown and crusty.  There will be enough juice in the pot to make gravy by thickening with a paste of flour and butter (ROUX) and cooking on HIGH until thickened.
